It's slowly becoming very autumn-like. That's why we crave stuffed zucchini. Not only is it a balanced meal, it is also easy to prepare and incredibly tasty.
Ingredients for two zucchinis
- 150g Easy To Mix Hack
- 1 zucchini
- 1 tbsp oil
- 2 cloves of garlic
- 1 onion
- 2 tsp thyme
- 5 tbsp tomato paste
- 2 tbsp soy sauce
- 150g cocktail tomatoes
- Fresh parsley
- Some vegan sprinkled cheese
preparation

Mix the mince with the water and put the mix in the fridge for 30 minutes.
- Cut garlic cloves, onion and cocktail tomatoes.
- Heat some oil and sauté onion, then garlic.
- Add the mince, chop it up and fry for about 10 minutes.
- Add the tomato paste, thyme and soy sauce.
- Now stir in the cocktail tomatoes.
- Preheat the oven to 180 degrees.
- Wash the zucchini, cut them in half and scoop them out a little with a spoon.
- Fill with the mince, sprinkle with vegan cheese and bake for 25 minutes.
- Garnish with fresh, chopped parsley and enjoy.
