Autumn time is pumpkin time. This recipe shows how versatile pumpkin can be prepared. This delicious vegan burger with caramelized onions, lettuce and crispy pumpkin wedges tastes heavenly. Mhmm 🥰

Ingredients
- Easy to mix burgers
- 4 burger buns
- Vegan cheddar
- arugula
- Red cabbage
- 1/4 Hokkaido pumpkin
- 2 tbsp olive oil
- 2 tomatoes
- Caramelized onions
- For the sauce: Vegetable yogurt, dill, lemon, spices of your choice
- For the fries: 1/4 Hokkaido pumpkin, spices of your choice, 2 tablespoons olive oil
preparation
- Mix, cool, prepare and fry the Easy To Mix Burgers according to the instructions.
- Preheat the oven to 220 degrees top and bottom heat.
- Cut 1/4 pumpkin into thin wedges.
- Cut 1/4 pumpkin into thin sticks for the fries.
- Place the pumpkin on a baking tray lined with baking paper, toss with oil and season to taste. Put in the oven for about 20 minutes.
- After a good 10 minutes, cover the patties with cheese on a second baking tray and put them in the oven together with the buns for about 5 - 10 minutes.
- Meanwhile prepare the sauce. To do this, mix all the ingredients together.
- Layer the patties with the remaining ingredients on the buns as desired.
- Enjoy the burger and really soak in it 😉
