- Hokkaido pumpkin
- smoked tofu
- sweet potato
- Corn on the cob

- Salad of your choice
- Toppings and spices as desired
preparation
- Prepare meatballs according to package instructions and set aside.
- Dice the vegetables and place them on a baking tray with a little oil and herbs. Bake in the oven for about 20 minutes at 200 degrees top and bottom heat.
- Meanwhile, take the meatball mixture out of the fridge and form approx. 6 meatballs. Fry over medium heat until desired level of browning is achieved.
- Arrange all ingredients on a bed of lettuce and top with a sauce of your choice. For example, we made a yogurt sauce consisting of vegan yogurt, some salt and pepper, mustard and herbs.
