Homemade products have many advantages. You can go according to your individual taste and always know what is contained in your final product. Whether schnitzel, meatballs or minced meat : plant-based cuisine offers you many preparation options as a substitute for otherwise meat-heavy dishes.
When choosing vegan substitute products, you essentially have two options.
When it comes to vegan substitute products, it depends on what you specifically want to prepare. Accordingly, you can produce your plant-based “ meats ” as needed.
Meatless works particularly well with seitan. All it takes is a few ingredients, patience and a little muscle strength. You mix wheat flour with water and knead the whole thing into a dough.
Note : Depending on the recipe, there are different information about the quantities. A common variant consists of one kilogram of flour and around 700 to 750 milliliters of water.
The dough must first rest, for which you should give it a few hours - for example overnight. Now it's time to wash it out.
To do this, add water to the dough and knead it thoroughly. This causes the starch to dissolve. You need to change the water several times and continue kneading until it remains as clear as possible and forms a solid lump. You now have the Seitan base.
Since this is rather tasteless per se, you can season the dough directly or marinate the finished seitan.
There are no limits to your imagination. From classic spices such as salt and pepper, which are typical for meat-based dishes, to exotic spice pastes - whatever tastes good is allowed.
This also applies to the further processing of plant-based meat products. Whether boiling, steaming, frying or baking - Seitan opens up a wide variety of recipes. From schnitzel to goulash to burgers and sliced meat - meat-free is very easy with Seitan.
To keep it even easier, you can also buy special gluten flour. It no longer contains any starch , which is why you can make Seitan yourself more quickly.
Meatballs in a vegan version are one of the most popular dishes in the plant-based diet. To make vegan meatballs , there are several possible base ingredients.
For the base, you can use legumes such as kidney beans or lentils. About 250 grams of it pre-cooked, with 100 grams of tender oat flakes and a little plant drink, make a good basis.
There are also other ingredients such as one to two tablespoons of oil, onion, garlic and various spices. Depending on how much liquid you use, the consistency of the mixture can be influenced.
A little flour can help if it turns out to be too sticky. Mix well and let sit for about a quarter of an hour - homemade and ready to use.
