It's summer and what's better than a gazpacho? Gazpacho comes from southern Spain and Portugal and is a soup served cold. In our recipe, strawberries are pureed with peppers and cucumbers and served with our vegan meatballs. The perfect light meal on hot days🍓.

½ Easy To Mix meatball or our fresh products
250g strawberries
½ cucumber
3 tbsp Easy To Shake Organic Oat Drink
1 red pepper
1-2 slices of white bread
1 spring onion
½ tbsp tomato paste
1 pinch of sugar
2 tbsp apple cider vinegar
½ tsp garlic powder
½ tsp chili powder
Salt pepper
1 tablespoon olive oil, for drizzling
2-4 leaves of basil, as a topping
Also: skewers
Easy To Mix Mix the meatball according to the instructions, cool and fry. Alternatively, fry the fresh meatballs according to the preparation recommendations.
Then skewer the meatballs.
Wash and clean strawberries.
Peel the cucumber and chop roughly.
Wash the peppers, remove the seeds and cut them into small pieces.
Wash the spring onion and cut into rings.
Soak white bread in the oat drink.
Now puree all the ingredients in the blender and season with the spices. If the gazpacho is too thick, just add a little water.
Then pour into cups or plates, serve with olive oil and basil and the Frika skewer.
