Who doesn't love it: Simple, easy and yet so delicious - meatballs with potato salad! Always possible, quick and 100% vegan. Yummy!

½ pack of Easy To Mix meatballs
500g potatoes, waxy
½ onion
3 tbsp oil
130ml vegetable broth
25ml vinegar
1 tsp mustard
1 pinch of sugar
Salt pepper
Fresh parsley for garnish
Easy To Mix Meatball mix according to instructions and cool.
Bring a pot of salted water to the boil and cook the potatoes, covered, over medium heat for about 25-30 minutes, depending on their size.
Peel onions and cut them into fine pieces.
Heat the oil in a pan and sauté the onion until translucent, deglaze with stock and bring to the boil briefly.
Remove pan from heat. Add vinegar, mustard and sugar. Season with salt and pepper.
Drain the potatoes, let them evaporate, then peel and cut into slices.
Place the potatoes in a bowl and pour the dressing over them. Let it steep for 30 minutes. Then season as desired.
In the meantime, prepare meatballs: Take the meatball mix out of the refrigerator, shape into meatballs and fry in a pan according to the preparation recommendations.
Serve potato salad with meatballs and fresh parsley. Enjoy!
