Pepernoten - vegan Christmas cookies

Mix organic oat drink with 100ml water.

Preheat the oven to 180 degrees top/bottom heat.

Mix flour with sugar, speculoos spice and salt.

Cut the cold butter into cubes and add it to the dry ingredients along with the oat drink.

Knead everything into a dough (possibly with a food processor).

Line a baking tray with baking paper.

Form small balls out of the dough and spread them out on the baking tray.

Bake the pepper notes in the oven for about 18-20 minutes. Enjoy, preferably with a hot chocolate.
