60g Easy To Mix vegan meatball
100g red pointed peppers
10g diced onions
2g peeled garlic
5g red curry paste
6ml sesame oil
140ml vegetable stock
250 ml coconut milk
120ml water
10ml sesame oil
4g organic coriander
1g red chilli
2g peeled garlic
2g smoked paprika powder
2g curry powder
For the brown rice, fried pack choi and mini peppers
49g wholegrain rice
20ml water
salt
120g Pak Choi Mini
60g pepper mini red
5ml sesame oil
25ml vegetable stock
2g Thai basil
Wash the peppers, halve them and remove the seeds.
Grill the pepper halves in a preheated oven at approx. 200 °C and then peel off the skin.
Sauté the onion cubes, garlic and curry paste in hot sesame oil, add the grilled peppers and top up with vegetable stock and coconut milk.
Cook over low heat for about 15 minutes and then puree.
Mix vegan minced meat mix with the appropriate amount of water, sesame oil, finely chopped coriander, chili and garlic.
Add smoked paprika powder and curry and knead well.
Form small balls from the minced meat mixture and steam them in the steamer for about 10 minutes at 100 °C.
Preparation of whole grain rice, fried pack choi and mini peppers
Cook whole grain rice in a rice cooker with added salt.
Clean and cut the pak choi and mini peppers. Then fry them in sesame oil.
Deglaze with vegetable stock and simmer.
Pick Thai basil and set aside.
Recommendation for serving
Arrange cooked wholegrain rice in a deep plate and place the coriander balls on top.
Lightly froth the soup and pour in.
Add the pak choi and mini peppers.
Garnish with coriander and Thai basil.
