½ pack of Easy To Mix turmeric balls
200g rice
Juice and zest of half a lemon
1 ½ tsp turmeric powder
2 stalks of fresh coriander
2 tbsp cashews
1 tbsp olive oil
2 tbsp plant-based yogurt
Salt
Mix Easy To Mix turmeric balls according to instructions and cool.
Meanwhile, wash the lemon, grate the peel and squeeze out the juice.
Wash the coriander, pick off the leaves and chop roughly.
Roughly chop the cashews and roast them in a pan without oil. Then set aside.
Cook rice according to the preparation recommendations.
Heat oil in a deeper pan, toast turmeric powder and lemon zest.
Add rice and fry. Then season with lemon juice and salt.
After the cooling time, form small balls from the turmeric ball mixture and fry until crispy according to the instructions.
Divide the rice between the plates, top with turmeric balls, coriander and cashews and serve with a dollop of yoghurt each.
