A recipe for Börek lovers: The combination of sweet pumpkin and spicy mince is the perfect mood brightener for foggy autumn days! The strawberry-sesame pepper gives the whole thing a very special spice - try it out!
60 minutes (+25 minutes baking time)
20 Börek sticks
75g Easy To Mix Hack
500 g Hokkaido pumpkin
1 onion
2 cloves garlic
10 sheets of filo dough
About 10 tbsp olive oil
Approx. 10 tbsp vegan cream
Salt, pepper, chili
oil for frying
To top: strawberry-sesame pepper
Grate pumpkin
Finely chop the onions and garlic and sauté them in a little oil
Add grated pumpkin, add half a cup of water
Let simmer until the pumpkin is cooked through
Prepare the mince according to the instructions and fry it in a pan with a little oil
Mix the pumpkin and mince, season with salt, pepper and chili
Mix the oil and cream
Place two sheets of filo dough on top of each other, brush with the oil-cream mixture and cut in half diagonally twice (so that 4 triangles are created).
At the wide end of the triangles, place the pumpkin mince filling in a narrow line and roll up the Börek: To do this, fold in the sides so that no filling falls out, then roll it towards the tip and place it on a baking tray lined with baking paper
Before baking, brush all rolls again with the oil-cream mixture and top with strawberry-sesame pepper
Bake for 20-30 minutes at 170°C (fan oven).
