Vegan banana bread recipe - this is how it works:

1. Mix 340 g baking mix, 145 ml water or plant-based drink (e.g. GREENFORCE vegan oat drink), 80 ml neutral vegetable oil and the puree of two ripe bananas with the mixer to form a smooth dough.

2. Pour the dough into a greased loaf pan, place a halved banana on the surface and press it in lightly. Bake the banana bread for 60-70 minutes at 160 °C top and bottom heat. The baking time may vary slightly depending on the oven.

3. Allow to cool before consumption.

4. Tip: It tastes great with a cream cheese topping. The riper the bananas are, the sweeter your banana bread will be!

The good thing about baking mixes: they are super quick and easy to prepare, they always turn out well, but can still be refined and customized as desired.

How about, for example, a sweet topping for those with a particularly sweet tooth? 😋 We love cream cheese toppings, so here is our suggestion for you:

You need: 300g vegan cream cheese, 70g powdered sugar, cinnamon and vanilla as desired.

Mix these ingredients into a smooth cream and spread it on the banana bread after it has cooled. Put the cake in the fridge for 2 hours. Done 💛

The baking mix has a shelf life of at least 4 months if stored in the original packaging in a cool, dry place and not above room temperature (< 25 degrees). However, please always note the corresponding best-before date on the back of the packaging.
The banana flavor in this banana bread actually comes from the fresh bananas in the dough. We don't add any artificial flavor enhancers, so be sure to use bananas. The riper the bananas, the sweeter the cake will be.
