With this Köttbullar recipe we are really competing with Ikea 😉 Not only super tasty, but also completely vegan. The protein-rich Köttbullar on creamy pumpkin and sweet potato mash together with the crunchy onion topping trigger a real food explosion in your mouth 🇸🇪

1 pack of fresh Köttbullar
Alternatively, you can also use the Easy To Mix Köttbullar
1-1½ tbsp organic oat drink powder (for 60 ml oat cream)
½ Hokkaido pumpkin
150g sweet potatoes
20g vegan butter
Fresh parsley for garnish
Salt pepper

Onion topping: 2 onions, 2 tablespoons flour, 3 tablespoons oil
Mix organic oat drink with 60ml water.
Bring a saucepan of salted water to the boil.
Wash the pumpkin, cut it open, remove the fibers and seeds with a spoon and cut it into cubes.
Peel the sweet potatoes and also cut them into cubes.
Simmer the pumpkin and potatoes for about 20 minutes, then drain and reserve a little of the cooking water.
In a bowl, mash the pumpkin and potato vegetables with the oat cream, reserved cooking water, butter and spices.
Fry the Köttbullar until golden brown according to the instructions.
For the onion topping: Heat oil in a second pan, peel the onions and cut them into fine rings, coat them in flour and deep-fry them. Then let it drain briefly on a kitchen towel.
Arrange everything on a plate and garnish with parsley and fried onions. Bon appetit!
