Filling:
75g Easy To Mix Schnitzel
150ml water
4 tbsp breading of your choice
1 cucumber
1 salad
1-2 carrots
Tortilla wraps (3 pcs.)
80ml water
2 tablespoons oil
1/4 tsp salt
90g corn flour
90 g spelled flour
Dressing:
50 g cashew butter or tahini
40 ml water
2-3 tbsp lemon juice
1 tsp mustard
1 tbsp fresh dill (or 1 tsp dried)
1 fresh clove garlic or 4 baked ones
1 tbsp yeast flakes (optional)
1/4 tsp salt
pinch of pepper
For the tortilla wraps, first mix all the dry ingredients into a dough and then add the wet ones.
Knead everything well until an elastic dough has formed. If necessary, add water or flour to achieve the right texture.
Cover and let the dough stand for half an hour.
Prepare Easy To Mix Schnitzel according to instructions and chill.
Wash/peel lettuce, cucumber and carrots and cut into bite-sized pieces.
For the dressing, put all the ingredients in a tall container and process into a creamy dressing using a hand blender. If the dressing is too thick, add another spoonful of lemon juice or water until you reach the desired consistency.
Then divide the dough into 3 equal pieces and roll out thinly with a little flour.
Briefly fry the tortillas on both sides in a large pan without fat. The tortillas should remain soft so they are easier to roll.
Form the schnitzels from the mixture, bread them with the crumbs and fry them. Then cut the schnitzels into strips.
Cover the wraps with the schnitzel strips, lettuce, cucumber and carrot. Then pour the dressing over it and roll up the wraps. Enjoy!
