Do you already know sushi sandwiches? They are really tasty and a lot of fun to prepare. We made them here with our fish frika and our creamy curry mango spread, but you can just let your creativity run wild. 🥒

150 g Easy To Mix Vegan Fish Frika
75 g vegan organic mango curry spread
20 g vegetable cooking oil
300g sushi rice
2 tbsp sushi vinegar (alternatively 3 tbsp rice vinegar, ½ tsp salt, 1 tbsp sugar)
4-6 nori sheets
1 avocado
1 large carrot
1 pre-cooked beetroot
1 cucumber
2 spring onions
soy sauce
Tip: In addition to or instead of the fish frika, the Easy To Mix vegan egg also tastes great in the sushi sandwiches! Simply prepare it according to the instructions and turn it into an omelet
Prepare Easy To Mix Vegan Fish Frika according to instructions and chill
Prepare vegan organic mango curry spread according to instructions and chill
Wash the sushi rice, put it in a pot with 450 ml of water and cook, adding more water if necessary
Then season with 2 tablespoons of sushi vinegar (alternatively, mix rice vinegar, salt and sugar and season the rice with it)
Allow rice to cool to room temperature
Cut the avocado into thin strips
“Peel” the carrot into strips using the peeler
Cut beetroot into thin slices
Cut cucumber into thin strips
Finely chop the spring onion
Shape the fish frika, flatten it and fry it
Assembling the sushi sandwiches
Cover the middle of the nori sheet with rice, place the vegetables, the mango curry spread and the fish frika on top, optionally add the omelette, cover with rice and fold the nori sheet in to create a rectangle
Apply light pressure to the rectangle with one hand so that the nori sheet sticks to the rice
Halve the sandwich lengthwise
Enjoy with soy sauce!
